Agar Explanation

Agar has a consistency of jelly and is acquired from red algae. It is composed of two constituents: agaropectin and the linear polysaccharide agarose. It is known to create the structure for support in the cell walls of a few algae species, and is released when it is boiled. The algae from which agar is obtained are agarophytes which are from the Rhodophyta phylum (red algae).
